
Chicken Fajitas
Add this crowd-pleasing chicken fajita recipe to your menu plan!
Ingredients
- 3 boneless, skinless chicken thighs
- Everyday Seasoning Little Sioux Kichen
- high-heat cooking oil
- 1 yellow onion, sliced
- 2 bell peppers, sliced
- approximately ΒΌ cup chicken broth
For serving:
- soft tortillas
- pico de gallo
- guacamole
- fresh cilantro
- lime wedges
Instructions
- Pat dry the chicken with paper towels and thinly slice. Season chicken with Everyday Seasoning.

- Heat a large cast iron skillet over medium-high heat with a good drizzle of high-heat cooking oil. Add the chicken (in batches) until just cooked through, then remove and set aside in a bowl.
- In the same pan, saute the onion and pepper with some Everyday Seasoning until tender crisp, adding extra oil if necessary. Reduce heat to low, and add all of the chicken back to the skillet. Add a splash of chicken broth to deglaze the pan, scraping up the brown bits & adding more broth if necessary. You want just enough to deglaze the pan but not make a runny sauce.
- Serve on soft tortillas and top with desired toppings.
- Note: this works great as steak and shrimp fajitas as well!
