To prepare as Pollo Loco Chicken, in a large bowl, whisk packet contents with 1/4 cup olive oil. Add 6-8 bone-in, skin-on chicken thighs to bowl, turning to evenly coat. Cover and refrigerate for at least 1 hour or up to overnight. Roast, grill, or smoke until thoroughly cooked.
